Makes 6 large muffins | Less than 30 minutes

Gluten-free Apple Muffins

Healthy grab-and-go muffins for busy mornings!

Ingredients:

  • 2 cups (500ml) almond flour
  • 1 tsp (5ml) baking powder
  • Pinch salt
  • 4 JOYA® apples, 2 cubed and 2 sliced
  • 1 tsp (5ml) ground cinnamon
  • ½ cup (125ml) brown sugar
  • Handful chopped pecan nuts
  • ¼ cup (60ml) canola oil
  • ¼ cup (60ml) milk
  • 3 eggs

Method:

  1. Preheat oven to 180°C.
  2. Line a 6-cup muffin pan with cupcake or muffin liners.
  3. Combine flour, baking powder, salt, cubed apples, cinnamon, sugar and nuts in a bowl.
  4. Whisk oil, milk and eggs and add to dry ingredients. Mix to form a batter.
  5. Spoon batter into each muffin cup.
  6. Top each muffin with apple slices.
  7. Bake for 15–18 minutes, or until a skewer inserted comes out clean. Serve.
