Makes 20 -24 squares

JOYA® oat squares

Oats, apples and peanut butter are always good together and the reason why these squares are really moreish. A perfect recipe as a healthy JOYA® take on oat squares.

Ingredients:

  • 125 ml (½ cup) brown sugar
  • 180 ml (¾ cup) soft butter
  • 60 ml (¼ cup) peanut butter
  • 1 egg, beaten
  • 10 ml (2 tsp) vanilla essence
  • 250 ml (1 cup) cake flour
  • 5 ml (1 tsp) baking powder
  • 2,5 ml (½ tsp) bicarbonate of soda
  • 2,5 ml (½ tsp) ground ginger
  • 5 ml (1 tsp) ground cinnamon
  • 500 ml (2 cups) rolled oats
  • 125 ml (65 g) almonds, coarsely chopped
  • 80 ml (⅓ cup) sultanas
  • 2 JOYA® apples in the skin, cubed

Method:

  1. Preheat the oven to 180 °C. Line a large baking tray or two smaller trays with baking paper. It’s not necessary to grease the paper, as the cookies contain enough butter.
  2. Place butter and sugar in large mixing bowl and beat with an electric beater until creamy. Add egg, vanilla, nutmeg and lemon rind and beat until well combined.
  3. Add the flour and mix until a soft dough forms. With a wooden spoon, gently stir the choc chips and apple cubes into the dough.
  4. Roll small balls of dough with your hands, place on the baking tray and flatten gently with the palm of your hand.
  5. Bake for 15-20 minutes or until light golden brown and cooked. Allow to cool on a cooling rack and store in an airtight container.

Chef’s Tip

  1. Substitute nutmeg with cinnamon or mixed spice.
  2. If chocolate chips are not available, chop 50 g good quality dark chocolate and use as above.
